Aubergine caponata is one of the most traditional dish from Sicily. Famous all over the world the aubergine caponata it is a vegetarian dish that sees the fried aubergine as the main ingredient.

 

It has a sweet and sour flavour and many of the ingredients used in it (like pine nuts and raisins) clearly show the influence of the Arab and Middle Eastern world.

The origin of the word “caponata” probably comes from the name of a fish called “capone”.  The latter was served only at the tables of the aristocracy. Therefore, the people unable to afford the expensive fish, replaced it with a cheaper aubergines plates that took its name from the replaced fish.

 

The caponata (capunata in Sicilian) is a typical product of Sicilian cuisine. The Catania caponata is distinguished from the other caponatas by the predominance of the aubergine and tomato, combined with pine nuts and fresh basil.
