Capers in salt


Capers are the immature, unripened, green flower buds of the caper bush (Capparis spinosa or Capparis inermis). Our capers plant is cultivated in Sicily. It’s most often associated with Mediterranean cuisines, but enjoyed worldwide. Brined or dried, the caper is valued for the burst of flavor it gives to dishes. It adds texture and tanginess to a great variety of recipes, including fish dishes, pasta, stews, and sauces and fantastic salads.

The caper is not a plant, but a shrub that grows in hard, cracky and uneven soil or rocks. The caper itself is not a fruit as we might imagine, but the pod of a flower, which is harvested before it can bloom. We find the caper mainly in Italy, more specifically in Sicily and its neighboring islands. The most famous grows on the islands of Pantelleria and Salina.


Capers are rich in vitamins and mineral salts. They contain a very high percentage of water, performing a moisturizing and diuretic action recommended for those suffering from cellulite. It has an antioxidant and anticancer action due to the presence of kaempferol, a flavonoid present in various plants and plant-based food


Capers in salt are really versatile. To be combined with simpler dishes such as the traditional pasta with capers and olives, or tasty Sicilian-style bruschetta with mozzarella, cherry tomatoes, basil and capers. Remember to wash them well before use it.
