PESTO ALLA TRAPANESE - USES AND CONSUMPTION:<\/b><\/h4>\n

 <\/p>\n

Pesto alla Trapanese is a typical pesto from western Sicily. As the word 'Trapanese' itself implies, it is a pesto that originated in the city of Trapani, a city that faces the Egadi Islands archipelago and resides at the westernmost tip of the island.<\/p>\n

With its intense flavour, Trapanese pesto is ideal as a condiment for pasta dishes. Its main ally is busiate, a typical Sicilian pasta format traditionally made with the use of busio, the stem of a local grass called desia. This pesto, coral red in colour, has as its main ingredients tomatoes and almonds, the latter of which, crushed, manage to release a flavour with an unmistakable taste. This condiment recalls the tradition of western Sicilian cuisine, closer to an Arabic style with spicy and intense flavours.<\/p>\n
