Melt the white chocolate in a bain-marie or microwave, then leave it until lukewarm.
In a bowl crumble the biscuits and add the pistachio grains and melted white chocolate and start mixing them together. Then add the Torrisi`s pistachio cream and continue vigorously mixing all the ingredients until it becomes a homogeneous mixture.
Take a baking paper, place the previous dough in the middle and create a salami or two with your hands, depending on the size you want to make your sweet pistachio salami.
Roll the baking paper around the salami and compress it tightly so that our salami is well closed. Put it in the fridge for about 40-45 minutes.
When it has cooled and hardened, we can remove it from the refrigerator and baking paper and dust it with icing sugar. The sweet pistachio salami is ready to be cut and served.
Notes
You can customise the sweet salami by replacing the pistachio kernels with other chopped nuts, such as walnuts or almonds, or by adding other ingredients such as grated orange peel or orange liqueur for an extra touch of flavour.
