Our tomatoes are hand-picked, cleaned and cut in half to be slowly dried in the sun, just as tradition dictates, on wooden frames and sprinkled with salt. The end result is a combination of primary sweetness with a hint of acidity that makes our sun-dried tomatoes unique.

THE SUN-DRIED TOMATO IN OIL - USES AND CONSUMPTION:
The dried tomato is a product that is very much linked to the flavours of Sicilian tradition. Harvested and then cut in half and slowly dried, it is a real delicacy with a sweet taste, characterised by slightly sour notes. This processing allows it to be consumed even during the coldest periods of the year, when there is a slowdown in production.
Widely used in cooking, it gives colour and character to your dishes. It can be enjoyed as an appetiser, perhaps on a Sicilian-style bruschetta with aubergines and salted ricotta or for pistachio lovers, with burrata, mortadella and pistachio pesto. Here, the sour notes of the tomato combine with the more delicate and sweet notes of the pistachio and give unique emotions to the palate.
From the finely chopped dried tomato comes the famous 'capuliato'. Excellent for tasty recipes and for making flavoured sauces, it is used as a condiment for salads, first and second courses of meat and fish.
