THE RINGS - USES AND CONSUMPTION:

Rings take their name from their shape and there is evidence of them as far back as the 1930s, when they were prepared in southern Italy. Although mainly popular in Italy, rings seem to enjoy a certain notoriety abroad as well, as confirmed by English-language cookbooks explaining how to use them in the kitchen.

 

As their name suggests, the rings have an 'O' shape, a diameter of between 4 and 10 millimetres and are made from durum wheat semolina. They are used in broth preparations and in many baked pies and timbales.

 

A rare variant of the annellini today are the anelloni d'Africa, whose name was inspired by the large earrings worn by African women that Italian soldiers encountered during their African campaigns.

 

Anelletti are mainly used for timballi, pies with pork, peas and local cheeses. They are also eaten lukewarm and it is not strange to see trays of anelletti on the beach. A dish for Sunday family lunches.
