WALNUT PESTO
INGREDIENTS: Walnuts 70%, extra virgin olive oil, sunflower oil, pine nuts 6%, Parmesan cheese (milk, salt, rennet), salt and pepper.

WALNUT PESTO - USES AND CONSUMPTION:
When talking about nuts, or dried fruits in general, one thinks of a product usually eaten at the end of a meal or munched during an aperitif. With our walnut pesto we wanted to give this fibre- and protein-rich ingredient plenty of scope for use.
Walnut pesto can be combined with mainly savoury dishes. Its delicate taste makes it a very versatile product, allowing it to be used in many different recipes. Its best ally is cheese, first and foremost goat cheese, but it also goes very well with fresh ricotta.
A very quick and easy recipe to suggest is bruschettone topped with sheep's milk ricotta, herbs, walnuts, pears and, to finish, a copious amount of walnut pesto. The combination of the different ingredients enhances and gives this snack a decidedly delicate flavour and a very pleasant taste.
