Lasagne with Pistachio Pesto
Lasagne with pistachio pesto is a refined and tasty dish that combines the tradition of Italian pasta with the unique flavour of pistachios. This recipe will guide you step by step in creating a dish that will amaze your guests and delight your palate.
Ingredients
- 250 g of fresh lasagne
- 200 g of unsalted pistachios
- 100 g of grated Parmesan cheese
- 200 ml of extra virgin olive oil
- 300 ml of béchamel
- 2 cloves of garlic
- Salt to taste
- Black pepper to taste
- Fresh basil
Instructions
- Preparing Pistachio Pesto
- Start by lightly toasting the pistachios in a pan for about 2-3 minutes. Let them cool
- In the blender, add the pistachios, garlic cloves, a pinch of salt, and blend.
- While the mixer is running, gradually pour in the extra virgin olive oil until a creamy consistency is achieved.
- Transfer the pesto into a bowl and add the Parmesan cheese, mixing well. Adjust the salt and pepper.
- Preparing Lasagne
- Preheat the oven to 180°C.
- In a large pot, bring salted water to the boil and cook the lasagne for 2-3 minutes, then drain and place on a clean cloth.
- In a baking pan, create a first layer of lasagne, spread a layer of pistachio pesto and add a little béchamel sauce.
- Continue alternating layers of lasagne, pesto and béchamel sauce.
- Finish with a final layer of lasagne, a sprinkling of Parmesan cheese and a few leaves of fresh basil.
- Bake for about 20-25 minutes until the surface is golden and crispy.
