CAPERS IN SALT - USES AND CONSUMPTION:
The caper is a shrub that grows in difficult terrain, taking root mainly in cracks and fissures in the soil or rocks. The caper itself, is not a fruit as we might well imagine, but is the pod of a flower, which is harvested before it can open. The caper is found throughout Italy, but it is in Sicily that it grows most, and especially on the neighbouring islands of Pantelleria and Salina, in fact, the most famous and sought-after capers are those from these two magnificent little islands.
Capers are rich in vitamins and minerals. They contain a very high percentage of water, acting as a moisturiser and diuretic, and are recommended for those suffering from cellulite. In addition, they act as antioxidants, anti-inflammatory, especially for arthritis sufferers, and anti-cancer thanks to the presence of the flavonoid kaempferol.
Salted capers are really versatile in the kitchen. They are excellent when combined with simpler dishes such as traditional pasta with capers and olives, or added to bruschetta with mozzarella, cherry tomatoes and basil, which enhance their Mediterranean flavour.
