Pickled green olives are among the most widely used products in traditional Sicilian kitchens and catering. Green olives are a very rich source of group vitamins A, B, C and E. Moreover, thanks to the mineral salts they contain, they provide the body with iron, magnesium, potassium, phosphorus, sodium and iodine, which provide the intestine with oleic acid useful for regulating the intestinal system.
Preserving green olives in brine dates back to ancient Roman times. Indeed, for Roman legionnaires, olives were a substantial meal, thanks to their considerable nutritional value and easy to transport, given their small size, during their long journeys.
