THE SICILIAN LENTIL - USES AND CONSUMPTION:
The Sicilian lentil is one of the smallest lentils in Italy. The fertile soils surrounding Sicily produce lentils with a delicate and very sweet flavour. It is a poor food, still cultivated by hand, but rich in protein, vitamins and minerals.
Mignon lentils, so called because of their small size, are excellent for traditional Sicilian recipes that have been handed down from generation to generation. These include pasta with lentils, soup, but also innovative and more recent recipes such as vegan lentil meatballs, a delicious mixture of lentil potatoes and various spices such as rosemary, thyme, mint, sage and marjoram, fried like a normal meatball and enjoyed with a tahini or yoghurt sauce.
Sicilian lentils are an excellent alternative for vegans, as they are rich in iron, phosphorus and B vitamins and are a perfect substitute for meat and or fish dishes. Its high fibre content and low fat content make it a perfect ally in the fight against and prevention of atherosclerosis.
