CUTTLEFISH INK SAUCE - USES AND CONSUMPTION:
For our selection of ready-made sauces here is the squid ink sauce. A sauce for 'total black' style dishes with a fresh and overwhelming flavour. This sauce pays homage to the sea and recalls the humble origins of fishermen. Those who cooked cuttlefish used their own ink as an ingredient, minimising waste in the kitchen.
A poor condiment, but one that today proves to be a gem in the kitchen, especially in the most renowned and quality-conscious kitchens, where traditional flavours are sought after.
Used, as a natural dye, in the most imaginative and original recipes, today, black cuttlefish sauce occupies a prominent position in many gourmet dishes. One of them is the arancinetti revisited with black. These rice balls are seasoned with black sauce and coated with a crispy layer of breadcrumbs, a typical dish of Sicilian popular tradition, revisited in a modern and more eccentric key, thanks to the use of black sauce.
